Weekly update 30/10/17

Recipe idea of the month:
Squash soup
We’re having a lot of lovely squashes again. They are full of flavour and make delicious soup ideal for those cold winter months! We tend to make a big batch of soup for ourselves and freeze it into portions. When we’ve had a long day and we don’t want to spend a long time in the kitchen making a decent meal, we can just get some of this wholesome soup out of the freezer. Add some fresh lemon juice and some home baked bread and you’ve got yourself a delicious and nutritious meal!

Here is how I make the soup, but of course you can add to it whatever you like!

Cut the squash in half so you can remove the seeds.

Then peel the squash (I use a potato peeler) and dice.

Place the diced squash into a pan. Add some water or stock and heat on a low heat, stirring occasionally. Add more water/ stock if you need to.

Dice up some onions.

Add onions plus herbs and spices to the squash. I add cardamon which goes really well with it. I also add, salt, pepper, garlic and mixed herbs.

Once the squash has softened, blitz it to make a thick soup. These squashes are naturally very sweet, so I add some fresh lemon juice to counteract this.

Drizzle some fresh lemon juice over the soup and serve with home made bread. Enjoy!
